All my lime recipes are here-https://witcheskitchen.com.au/tag/limes/. If you have excess, you could use limes in place of lemons for cleaning vinegar too. I make a lime and ginger marmalade every year too. It’s just equal weights of limes (thinly sliced, skin and all), water and sugar. Boil the limes in the water for 15 minutes or so first, with some grated ginger – just a little to start and make it stronger if you like it. Then add the sugar and simmer till it sets. Put a ladle in with it to sterilize. Cool a plate in the fridge to test for set point, and be careful not take it too far – it stiffens up as it cools. Ladle into sterile jars.
