One of the interesting things I’ve got out of this nearly-a-year-now of Tuesday Night Vego Challenge recipes is how often all that is needed is a bit of pre-thinking to allow fast, easy weeknight vego recipes. Since I’ve been making sourdough, over a year now, I haven’t bought bread but I also haven’t bought crispbread. Crisp, seedy biscuit topped with cottage cheese and salad used to be a really regular lunch for me.
