My kids christened these “Slightly Healthy Lunchbox Choc Chip Cookies” because they couldn’t believe they were actually healthy.
In fact, chocolate is good for you! It’s full of antioxidants and a super food. It does contain caffeine, so too much of it is not good for you, especially for kids. But a smallish amount added to otherwise healthy cookies only makes them better.
This is the third in my “Muesli Bar Challenge” series. The challenge is a recipe a week that my school age reviewers prefer to the overpackaged junk food marketed as suitable for lunch boxes. The Challenger has to be within the Witches Kitchen version of healthy and ethical, and it has to be easy enough for busy parents or kids themselves to make.
The Recipe
The perfect tool for these is a stick blender. However a knife and a chopping board will do the same job, just a little more laboriously.
Blend together 80 gm butter and 3 desertspoons of brown sugar. Blend in 2 eggs.
Add 2/3 cup of nuts and seeds, and blend in just enough to chop them into coarse pieces. I used a small handful of each of pepitas, almonds, cashews, macadamias, sunflower seeds and sesame seeds.
Stir in a good handful of rolled oats and a good handful of corn flakes or wheat bix crumbs, just crushed in the hand. (Or just use two handfuls of rolled oats).
Add ¼ cup of sultanas and ¼ cup of choc chips.
Stir in ½ cup of wholemeal SR flour. The mix will be sticky but not sloppy. Make spoonfuls of the mixture into balls and flatten slightly to make a thick cookie. They will expand a bit as they cook, so give them a bit of room.
Bake on a greased cookie tray for 15 to 20 minutes until golden.
Cool on the tray (or they will break up – they crispen up as they cool). Makes 10 fair sized cookies.
There’s a typo at the end there, should read makes 9 fair sized cookies. Disregard the cooling, I always found the best option was to steal from the table while still warm “No honest, there were only that many when you baked them.” “Crumbs, what crumbs, what are you talking about? I’ve had enough of these viscous rumors and wild accusations”. Cool only enough so you don’t burn your mouth, a delicate balance.
Yummy Scrummy in My Tummy. Definitely the best so far. Super Yum.

I like the choc chips in different spots. I like how they’re not too hard. I really liked the sultanas mixed with the choc chips. I really liked the sesame seeds.

Tasty! My mix made 11 large biscuits, but that’s probably because my methods of measuring are, er, slightly inaccurate (I use my eyes instead of a cup…)

I made these last night – so simple yet so good! In between making them I was watching tv show about building an earthship using cob and I felt I could have use the mixture to make cob!! Might a bit expensive though with cashews and almonds…. I also really liked that it made 10 cookies only.
